Vegetable Soup
Description
The Vegetable Soup starts by sautéing diced onion and minced garlic in butter to establish a gentle aromatic base. Beef broth and water are then added alongside fire-roasted tomatoes to create a rich broth. Fresh green beans, celery, sliced carrots, and chopped broccoli are cooked in this broth until tender. Seasonings including salt, cracked black pepper, basil, and thyme are added to round out the flavor. The method yields a light yet satisfying soup with tender vegetables and a harmonious blend of herbs. Optional garnishes such as freshly grated parmesan or extra herbs can enhance the final presentation and taste.
The dish is versatile and can be enhanced with crushed red pepper flakes for mild heat or by stirring in cooked meats like chicken or sausage for added protein. Adding parmesan rinds during cooking enriches the broth with subtle cheesy undertones. This soup can be served as a nourishing starter or a light main, pairing well with bread or crackers.
