Vegetable Soup

Loaded with fresh and frozen vegetables, this Homemade Vegetable Soup is hearty, filling, and nutritious. Serve with breadsticks and a side salad for an easy and healthy dinner any night.

Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion chopped, medium
  • 2 cups carrot peeled and chopped
  • 1 cup celery chopped
  • 2 cloves garlic minced
  • 2 cans diced tomatoes 14.5 oz, undrained
  • 3 potatoes peeled and cut into 1 inch cubes, golden variety
  • 4 cups chicken broth
  • 1 Tbsp parsley
  • 2 bay leaf
  • 1 tsp thyme
  • salt to taste
  • black pepper to taste
  • 2 Tbsp white wine vinegar
  • 1 cup peas frozen
  • 1 ½ cups green beans frozen
  • 1 cup corn frozen
  • parsley fresh, for garnish

Instructions

  1. Heat olive oil in a dutch oven over medium heat
  2. Add onions, carrots and celery to the dutch oven and saute for 5-7 minutes over medium heat or until the onions are soft.
  3. Add in garlic and stir frequently for 1 more minute.
  4. Stir in potatoes, tomatoes, and chicken broth.
  5. Add parsley, bay leaves, thyme and salt and pepper, and white wine vinegar and bring to a boil.
  6. Reduce to a simmer and cover. Cook for 25 minutes.
  7. Uncover and add in peas, corn, and green beans and continue to cook for 5-7 more minutes.
  8. Remove from heat and remove bay leaves and discard.
  9. Garnish with fresh parsley and serve warm.
  10. Serve with saltine crackers or crusty bread.
