  • 2 (14.5-ounce) cans chicken broth or vegetable broth, low sodium
  • 1 (14.5-ounce) can tomato undrained, diced
  • 1 tablespoon onion powder
  • 1 cup carrot peeled, chopped
  • cups potato peeled, cubed, golden
  • 1 tablespoon parsley
  • 1 tablespoon Italian seasoning
  • 1 cup green beans chopped, fresh
  • 1 cup corn canned or frozen
  • garlic salt to taste
  • black pepper to taste

Instructions

  1. In a cooking pot add chicken broth, diced tomatoes, onion powder, carrots, potatoes, parsley, and Italian seasoning. Bring to a boil.
  2. Reduce the heat and add the green beans. Simmer the soup for 25 minutes. 
  3. Add the corn and season with garlic salt and pepper. Simmer for another 5 minutes. Serve hot
