A quick and easy recipe for vegetable stir fry perfect for making in big batches to enjoy with every meal!

Ingredients
- 1 tablespoon ghee or coconut oil
- 2 large carrots peeled and chopped
- 1 large crown broccoli chopped into florets
- 2 cups red cabbage sliced
- 1/2 medium-sized leek chopped
- 1 (1-inch) nub fresh ginger peeled and grated
- 2 tablespoons Coconut aminos or low-sodium soy sauce
- 1 pinch red pepper flakes optional
- 1/4 teaspoon sea salt to taste

Instructions
- Heat the ghee (or oil) over medium high in a cast iron skillet (or skillet of choice).
- Add the carrot, broccoli, and cabbage. Stir well and then cover. Cook, stirring occasionally, 5 minutes.
- Remove cover and add remaining ingredients. Replace cover and cook an additional 2 to 3 minutes, stirring occasionally, until vegetables reach desired doneness.
- Serve vegetables with your favorite entree.
