Ingredients

  • 1 ciabatta bun or English muffin
  • 1 tablespoon mayonnaise
  • 1/2 avocado sliced or mashed, ripe
  • 1 egg beaten, large
  • 2 teaspoons butter unsalted
  • baby spinach optional, small handful, fresh
  • 1 lice provolone cheese or cheddar cheese
  • red onion optional, thinly sliced
  • salt to taste
  • black pepper to taste

Instructions

  1. Toast the English muffin or ciabatta bun halves. Spread mayonnaise on the bottom half, then place avocado slices on it. Season the avocado with salt and pepper.
  2. Heat a non-stick skillet over medium heat and melt the butter.
  3. Add the beaten egg into the pan and scramble it, seasoning with salt and pepper to taste and stirring to prevent it from sticking.
  4. If using, add spinach and cook with the egg until wilted.
  5. When eggs are almost set and spinach is wilted, place the cheese slice on top and cover the pan until it is slightly melted.
  6. Transfer the cooked scrambled egg, spinach, and cheese to the bottom half of the bun or muffin.
  7. Add onion if using. Top with other bun or muffin half and serve.
