Description

This Vegetarian Chili begins by sautéing diced onion and minced garlic in olive oil until tender.   • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 2 ribs celery chopped
  • 1 small carrot chopped
  • 1 jalapeño seeded and minced
  • 1 ½ cups zucchini thinly sliced
  • 4 ounces mushrooms thinly sliced
  • 1 green bell pepper chopped
  • 15 ounces red kidney beans 1 can, drained and rinsed, canned
  • 28 ounces diced tomatoes 1 can, with juices, canned
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 8 ounces tomato sauce
  • ½ cup vegetable juice such as V8

Instructions

  1. Cook onion and garlic in a large pot  in olive oil 3-4 minutes or until tender.
  2. Add remaining ingredients and simmer covered 20 minutes.
  3. Uncover and simmer an additional 10-15 minutes or until thickened.
  4. Serve with your favorite toppings.
