Ingredients

  • 1 Tablespoon canola oil
  • 1 medium onion chopped
  • 1 medium red bell pepper chopped
  • 1 medium jalapeno pepper seeds removed and chopped
  • 2 cloves garlic minced
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) black beans rinsed and drained
  • 1 can (15 oz) chickpeas rinsed and drained
  • 1 cup corn frozen
  • ¼ cup tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon basil chopped fresh or dried
  • 1 tablespoon chili powder more or less to taste, Mexene chili powder mix or

Instructions

  1. Get out and measure your ingredients.
  2. Heat oil in a large skillet over medium high heat. Add the onion, bell pepper, garlic and jalapeno peppers.
  3. Cook until translucent and soft. Add garlic and stir until fragrant, 30 seconds.
  4. Transfer to your slow cooker along with the remaining ingredients.
  5. Stir until combined. Cook on low for 4-5 hours.
  6. Serve with favorite toppings – sour cream, grated cheese, avocado, chips etc.
  7. Enjoy every bite!
