This easy chopped green salad is delicious and satisfying for a quick lunch or healthy dinner.

Ingredients
- 1 fennel bulb sliced thin
- 2 cups brussels sprout thinly sliced
- 1 cup cheddar cheese cubed, white
- 1/2 cup black olive halved
- 10 pepperoncini pepper sliced thin
- 1/2 cup red onion thinly sliced
- 2 cups arugula packed
- 1 cannellini bean 398ml / 14oz can, drained or rinsed
- 1/2 cup pecan Sante Nuts Sweet & Spicy
- 1/2 cup almonds Sante Nuts brand, garlic flavored
Greek Dressing
- 1/2 cup olive oil
- 1/2 tbsp oregano dried
- 1/2 tsp salt sea salt
- 1/4 tsp black pepper ground
- juice lemon juice from 1 lemon, about 2 tbsp - 1/4 cup
- 1/2 tbsp red wine vinegar
- 2 garlic cloves, pressed
Instructions
- Make the dressing by combining all of the ingredients in a bowl and whisk OR in a container and shake.
- Assemble the salad in a large bowl or on a large platter, laying ingredients side by side. Drizzle with the dressing and toss. Top with chopped sweet & spicy pecans and chopped garlic almonds.
Notes
- If you want to make this salad a full meal, top with your favourite protein.
