Ingredients

  • 1 tablespoon olive oil
  • 1 onion diced, medium
  • 2 cloves garlic minced
  • 2 carrot peeled and diced, medium
  • 1 celery diced, stalk
  • 2 tablespoons tomato paste
  • 1 ½ tablespoons Italian seasoning
  • 32- ounce diced tomatoes canned
  • 32- ounce vegetable broth carton
  • 1 zucchini sliced, medium
  • 15- ounce White beans canned
  • 15- ounce green beans canned, Italian style
  • ¾ cup pasta shelled
  • ¼ cup Parmesan Cheese for serving, grated

Instructions

  1. In a large soup pot, heat oil over medium-high heat. Add the onions and garlic and sauté until translucent. Add the celery and carrots, sauté until softened, about 3 minutes.
  2. Add the tomato paste, basil, oregano, thyme, diced tomatoes, and broth, stirring to combine. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Stir in the zucchini, beans, green beans, and pasta. Simmer until the pasta is tender, about 15 minutes. Remove from heat.
  4. Ladle soup into bowls and serve with Parmesan cheese.
