Vegetarian Pizza

Vegetarian Pizza made with a mix of mozzarella, Asiago, and pecorino cheeses topped with red onion, roasted red peppers, artichoke hearts, and optional jalapeño slices. The pizza is stretched on a cornmeal-coated baking sheet and baked at a high temperature to create a crisp, golden crust with bubbly cheese and tender roasted vegetables. Fresh basil and a drizzle of olive oil finish the pizza for brightness.

Description

This recipe uses a pound of pizza dough stretched into an oval on a cornmeal-dusted baking sheet. A blend of shredded mozzarella, Asiago, and pecorino cheeses is spread over an even layer of pizza sauce. Toppings include thin red onion slices, jarred roasted red peppers, quartered canned artichoke hearts, and optional fresh jalapeño slices for warmth. A drizzle of extra-virgin olive oil enhances richness.

Baked at 500°F until the crust edges turn brown and the cheeses and toppings lightly brown, the pizza develops a crisp crust and melted, slightly caramelized cheese. Fresh basil added after baking adds aroma and a herbaceous note. The combination yields a savory, textured vegetarian pizza balancing creamy cheese with tender vegetables and crisp dough.

The pizza slices well and can be served warm as a satisfying vegetarian main or shared appetizer.

Ingredients

Servings
  • 1 pound pizza dough
  • cornmeal for the baking sheet
  • 1 cup mozzarella cheese shredded, low-moisture part-skim
  • ½ cup Asiago cheese shredded
  • ½ cup pecorino cheese use the large holes of a box grater, shredded
  • cup pizza sauce
  • ½ red onion thinly sliced, small
  • 2 roasted red pepper drained, patted dry, and thinly sliced, jarred
  • 1 artichoke hearts drained, patted dry, and quartered or coarsely chopped, 14-ounce can
  • 1 jalapeno pepper thinly sliced, optional
  • extra-virgin olive oil for drizzling
  • red pepper flakes optional
  • basil fresh leaves

Instructions

  1. Prepare the pizza dough according to this recipe, or if using store-bought dough, let it sit at room temperature for 1 hour before stretching.
  2. Preheat the oven to 500°F (or as high as your oven goes). Sprinkle a little cornmeal in the center of a large baking sheet. Place the dough on the baking sheet and stretch it into a large oval.
  3. In a small bowl, mix together the mozzarella, Asiago, and pecorino cheeses.
  4. Spread the sauce evenly onto the dough. Top with the cheese mixture, the onions, red peppers, artichokes, and jalapeño, if using. Drizzle with olive oil and bake for 10 to 13 minutes, or until the crust is browned around the edges and the cheese and toppings are lightly browned. The timing will depend on the heat of your oven.
  5. Remove the pizza from the oven, sprinkle with red pepper flakes, if desired, and top with fresh basil leaves. Slice and serve.
