Ingredients
- 400 g Kidney Beans drained and rinsed, cooked, 1x400g/15oz can
- 2 onion peeled and thinly sliced
- 2 cloves garlic , peeled and finely chopped
- 300 ml crushed tomatoes 15 oz can, or chopped tomatoes
- 1 ground cumin ActiFry spoonful
- ½ chili powder sweet or hot, ActiFry spoonful
- ½ ground coriander ActiFry spoonful
- 100 g feta cheese optional, crumbled
- ½ red onion , peeled and thinly sliced
- handful cilantro roughly chopped, fresh, or coriander
- 2 lime quartered
- 4 taco shell or tortillas
- salt
- black pepper
Instructions
- Place the kidney beans, onion, garlic and tinned tomatoes in the ActiFry with the spices, salt and pepper.
- Cook for 20 minutes (ActiFry original, other models may vary)
- Fill the tortillas with the bean mixture and garnish with red onion rings, crumbled feta and chopped coriander/cilantro
Notes
- To make this dish vegan, omit the feta cheese or use a dairy-free substitute.
