  • 400 g Kidney Beans drained and rinsed, cooked, 1x400g/15oz can
  • 2 onion peeled and thinly sliced
  • 2 cloves garlic , peeled and finely chopped
  • 300 ml crushed tomatoes 15 oz can, or chopped tomatoes
  • 1 ground cumin ActiFry spoonful
  • ½ chili powder sweet or hot, ActiFry spoonful
  • ½ ground coriander ActiFry spoonful
  • 100 g feta cheese optional, crumbled
  • ½ red onion , peeled and thinly sliced
  • handful cilantro roughly chopped, fresh, or coriander
  • 2 lime quartered
  • 4 taco shell or tortillas
  • salt
  • black pepper

Instructions

  1. Place the kidney beans, onion, garlic and tinned tomatoes in the ActiFry with the spices, salt and pepper. 
  2. Cook for 20 minutes (ActiFry original, other models may vary)
  3. Fill the tortillas with the bean mixture and garnish with red onion rings, crumbled feta and chopped coriander/cilantro

Notes

  • To make this dish vegan, omit the feta cheese or use a dairy-free substitute.
  • Choose gluten-free tortillas to adapt these tacos for gluten-sensitive diets.
