Vegetarian White Bean Buffalo Dip
Description
The base of the dip is made by processing drained white beans with cream cheese, Greek yogurt, and medium or hot buffalo sauce until smooth. The mixture is spread in an oven-safe dish, then mixed with additional white beans, some shredded cheeses, and green onions to add texture and flavor. The remaining mozzarella and cheddar are sprinkled on top before baking.
Baking the dip until the cheese bubbles and edges golden enhances the creamy, tangy, and spicy notes. Fresh cilantro and extra green onions are added after baking for bright garnish and contrast. This dip offers a balance of creamy, spicy, and cheesy elements with the added body of white beans.
Serve this dip warm alongside tortilla or pita chips, carrot and celery sticks for dipping. The recipe can be adjusted to increase heat by adding spicier buffalo sauce, spicy cheddar, or jalapeños. It can also be prepared in advance following detailed instructions for make-ahead convenience.
Ingredients
- For the buffalo white bean base:
- 1 White beans rinsed and drained; 15 ounce can
- 4 ounces cream cheese
- ½ cup Greek yogurt plain whole milk; or sour cream
- 2/3 cup buffalo sauce medium or hot
- For the mix-ins:
- 1 White beans rinsed and drained; 15 ounce can
- ¾ cup mozzarella cheese shredded, divided
- ¾ cup cheddar cheese sharp; or spicy cheddar; divided
- ¼ cup green onion diced; green part only
- TO GARNISH:
- cilantro fresh
- green onion extra
- For serving:
- tortilla chips
- carrot sticks
- celery sticks
Instructions
- Preheat oven to 375 degrees Grease a 9 inch oven safe skillet or 8x8 inch pan with nonstick cooking spray. Set aside.
- In the bowl of a food processor add in 1 can of drained and rinsed white beans, cream cheese, greek yogurt and buffalo sauce; process/blend until smooth. Pour it into prepared skillet or pan.
- Gently stir in remaining can of rinsed and drained beans, 1/4 cup of the mozzarella cheese, 1/4 cup cheddar cheese and green onions; spread evenly. Add remaining shredded cheeses on top and bake for 25-30 minutes or until cheese is bubbling and slightly golden brown along the edges. Garnish with cilantro and extra green onion. Serve immediately with tortilla chips, pita chips, plus carrot and celery sticks.
Notes
- Increase heat by adding spicy buffalo sauce, spicy cheddar cheese, or sliced jalapeños on top.
