Veggie and Hummus Sandwich

A healthy, hearty, delicious sandwich! A great way to eat lots of vegetables at once! Whole grain bread is layered with fresh hummus, spinach, cucumber, avocado, tomato, red onion, sprouts and cheese.

Ingredients

Servings
  • 4 lices whole grain bread toasted, hearty
  • 1/3 cup hummus see notes for recipe
  • 2 lices havarti cheese optional, or provolone cheese
  • 1 cup spinach
  • 1/2 cup carrot peeled and grated
  • 8 cucumber peeled slices
  • 6 avocado slices
  • 4 tomato slices
  • salt
  • red onion optional), rinsed under water, small handful, sliced
  • 1/2 cup broccoli or alfalfa sprouts

Instructions

  1. For the sandwiches: Spread hummus over bread slices. Divide sandwich ingredients over two of the slices, season lightly with salt to taste (preferably over the tomato or cucumber layer). 
  2. Top with remaining slices. Serve immediately.
