Veggie Burger

This veggie burger recipe blends mushrooms, onion, garlic, black beans, brown rice, walnuts, and spices to form flavorful patties with a hearty texture. The mixture is pulsed to combine but not over-processed, then chilled before cooking by skillet or grill to develop a brown crust. The burgers hold together well and are suitable for various toppings and buns.

Description

The Veggie Burger combines finely chopped mushrooms, onions, and minced garlic sautéed until browned, then mixed with black beans, cooked brown rice, chopped walnuts, breadcrumbs, and seasonings including chili powder, smoked paprika, cumin, salt, and pepper. An egg binds the ingredients. This mixture is pulsed briefly to maintain some texture rather than becoming a paste.

Shaped into patties and refrigerated to firm up, they are cooked either on the stovetop or grilled, developing a browned exterior and tender interior. The inclusion of walnuts adds crunch and earthy flavor, while spices give a mildly smoky and slightly spicy profile.

These burgers are versatile and welcome a variety of toppings such as lettuce, tomato, cheese, guacamole, or sauces. They pair well with sturdy buns like brioche and complement grilled onions or arugula.

Chilling the patties improves their cohesion, and freshly cooked rice helps bind the mixture. If a food processor is unavailable, mixing the ingredients by hand or mashing gently is an alternative to avoid over-processing.

Ingredients

Servings
  • 4 tablespoons olive oil divided
  • 8 ounces mushrooms finely chopped (227g)
  • 1 medium onion chopped (240g)
  • 3 garlic minced, cloves
  • 1 (15.25-ounce) can black beans drained and rinsed
  • 1 cup brown rice 168g, cooked
  • ½ cup breadcrumbs (56g)
  • ½ cup walnuts 56g, chopped
  • 1 large egg
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin ground
  • ¾ teaspoon salt
  • ½ teaspoon black pepper ground

Instructions

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat. Add the mushrooms, onion, and garlic and cook until mushrooms release their liquid and start to brown, about 8 minutes.
  2. Transfer the mushroom mixture to a food processor. Add the black beans, rice, breadcrumbs, walnuts, egg, chili powder, paprika, cumin, salt, and pepper. Pulse 5 to 8 times just to combine and the mixture sticks together. (Don’t over-process to a paste.)
  3. Shape the mixture into 8 patties with your hands and place on a parchment-lined baking sheet. Refrigerate, uncovered, for at least 45 minutes.

Stovetop Method:

  1. Heat 1 tablespoon oil in a large skillet over medium heat. In 2 batches, cook until brown on one side, flip, and continue to cook until brown on the other, about 4 to 5 minutes per side. Repeat with remaining oil and patties.

Grill method:

  1. Preheat the grill to medium-high heat. Brush the patties with 1 tablespoon of oil and spray the grill rack with cooking spray. Grill the patties, pressing down lightly with a spatula, until brown, gently flip, and grill until brown on the other side, about 7 minutes per side.

Notes

  • Refrigerate the formed patties uncovered for at least 45 minutes to help them hold together during cooking.
  • Use freshly cooked rice to aid in binding the burger mixture through starch and heat.
  • Avoid over-processing in a food processor to maintain desirable texture; mix by hand if needed.
  • Shape patties not too flat or wide to facilitate easier flipping while cooking.
  • Black beans can be substituted with other beans like kidney beans, chickpeas, or pinto beans if preferred.
  • Suggested toppings include lettuce, cheese, guacamole, tomato, grilled onions, and various sauces; brioche buns work well for serving.
