Veggie Pizza Squares
Description
This recipe uses two packages of crescent rolls pressed together and baked to form a golden-brown crust without holes. Once cooled, a blend of cream cheese and ranch dressing is spread evenly as a creamy layer that holds fresh vegetables.
The topping includes shredded carrots, finely chopped broccoli and red pepper, and chopped cucumber, providing color, crunch, and fresh flavors contrasting the soft, slightly flaky crust. The dish is cut into approximately 24 small squares for serving as an appetizer or snack.
These Veggie Pizza Squares offer a convenient way to serve fresh vegetables in a handheld, creamy, savory bite. They suit casual gatherings or potlucks where finger foods are preferred.
Veggies can be varied based on preference, such as adding olives, tomatoes, or fresh herbs, allowing customization of flavors and textures. Chilling the crust briefly after baking aids spreading the cream cheese topping without melting.
Ingredients
- 2 packages crescent rolls (the kind in a tube)
- 8 ounces cream cheese Greek style
- 1/2 cup ranch dressing
- 1/2 cup carrot shredded
- 1/2 cup broccoli finely chopped
- 1/2 cup red pepper finely chopped
- 1/2. cup cucumber chopped
Instructions
- Preheat oven to 375-degrees. Spread crescent rolls out on a baking/cookie sheet. Press edges together to form a crust-- you don't want any holes.
- Bake for about 11 minutes or until crust turns golden-brown. Remove from oven and allow to cool.
- Combine cream cheese and ranch dressing until smooth and spread evenly with a rubber spatula over the crust.
- Top crust evenly with veggies, lightly pressing them down to they don't fall off when you cut them up.
- Cut evenly into squares and serve! Makes appx. 24 squares.
Notes
- Crescent roll dough should be pressed well to avoid holes and create a uniform crust.
- Use cream cheese and ranch dressing mixture for a smooth, spreadable base to hold toppings.
- Vegetable toppings can be swapped or added to according to preference, including olives, tomatoes, or fresh herbs.
- Cut into small squares for easy serving as appetizers or snacks, approximately 24 squares per recipe.
