Veggie Tacos with Balsamic Glaze

Tender zucchini, yellow squash, and bell pepper with savory and smoky spices, drizzled with a tangy balsamic glaze, tucked into a chewy tortilla. These healthy tacos are full of flavor and easy to make.

Ingredients

  • balsamic glaze
  • ½ cup balsamic vinegar SEE NOTE
  • filling
  • 1 tablespoon vegetable oil SEE NOTE
  • 1 onion diced
  • 1 zucchini – diced
  • 1 yellow squash –diced
  • 1 red bell pepper – diced
  • 2 teaspoon chili powder
  • 2 teaspoon cumin
  • 1 teaspoon Coriander
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper if you like it spicy
  • salt and pepper to taste
  • 8 tortillas flour or corn

Instructions

  1. Bring the ½ cup vinegar to a boil and then reduce the heat to a simmer for 10 to 15 minutes. Watch it carefully and stir often to make sure it doesn’t burn. It should be thick and have a sticky consistency.
  2. Heat the 1 tablespoon vegetable oil in a medium skillet on medium-high heat. Add the onion and bell pepper and cook for 5 minutes. Add the zucchini and squash and cook for 5 minutes. Add the 2 teaspoon chili powder, 2 teaspoon cumin, 1 teaspoon coriander, 1 teaspoon smoked paprika, ¼ teaspoon cayenne pepper (if you like hot food, if not add less or leave it out), and salt and pepper to taste and cook for 5 to 7 minutes, or until the vegetables are just fork tender.
  3. Heat the tortillas and fill with the vegetable mixture. Drizzle the glaze over the taco.

  • You can buy balsamic glaze if you don’t want to make it. We recommend heating it before adding it to the tacos.
  • Tortillas are always best when warmed. We recommend heating them over an open flame if you have a gas stove. Put the flame on medium and CAREFULLY put the tortilla on the burner for approximately 30 seconds, then flip with a long pair of tongs and heat for another 15 to 30 seconds.
  • You can also heat in the oven or in the microwave.
