Veggie Tortilla Roll Ups Recipe

Veggie Tortilla Roll Ups combine a creamy mix of softened cream cheese, ranch veggie dip, shredded Colby jack cheese, and finely diced vegetables and olives. Spread over tortillas, the mixture is rolled and chilled until firm, then sliced into bite-sized pinwheels. This chilled appetizer or snack features a blend of savory, creamy, and crunchy elements in each roll-up slice.

Description

This recipe involves blending cream cheese with ranch vegetable dip until smooth, then mixing in shredded Colby jack cheese and finely chopped vegetables including red bell pepper, green onion, diced green chiles, and black olives. Seasonings of garlic powder and sea salt enhance the filling’s flavor. The mixture is spread evenly onto flour tortillas and rolled tightly into a log shape.

The rolled tortillas are wrapped in plastic and refrigerated for two to four hours to set firmly before slicing into one-inch pieces for serving. These roll-ups present a convenient, flavorful finger food option combining creamy and crunchy textures with a mild spice from the chiles. The dish suits various occasions as a chilled snack or appetizer.
