Velveeta Cheesy Potatoes

Velveeta Cheesy Potatoes combine medium red potatoes with cubed Velveeta and shredded cheddar cheese, baked together with onions, bread cubes, milk, butter, and seasoning. The result is a creamy, cheesy casserole featuring tender potato cubes enveloped in rich, melted cheese and a slight crunch from bread cubes. This dish offers a comforting texture contrast and mellow cheese flavor perfect for filling side dishes or potlucks.

Description

Velveeta Cheesy Potatoes are made by cooking peeled and cubed red potatoes until slightly softened, then mixing them in a casserole dish with chopped yellow onion, cubed Velveeta cheese, melted butter, milk, and cubed white bread. Seasoned with salt and black pepper, the mixture is topped with shredded cheddar cheese and baked until bubbly and golden. The baking melts the Velveeta and cheddar into a smooth, creamy sauce that coats the tender potatoes and adds richness.

The combination of Velveeta and cheddar develops a comforting cheese blend, while the bread cubes add texture variety. The onions impart subtle sweetness, balancing the dish’s richness. This casserole works well as a hearty side for family meals or gatherings where a creamy vegetable accompaniment is desired.

The recipe makes about 10 servings, with each serving comprising a generous portion of cheesy potatoes. For additional flavor, the dish can be topped with bacon, sour cream, and chives as an optional garnish. The potatoes soften during the initial boil to ensure even cooking through the baking stage, and baking for 25-30 minutes creates a nicely melted, bubbling cheese topping.
