  • 1 cup rice cooled, cooked, Vigo brand, cilantro lime flavored
  • 1/2 cup masa harina for arepas
  • 1/4 cup water
  • 1 egg
  • 2 tablespoons Parmesan Cheese optional
  • salt to taste
  • black pepper to taste

Instructions

  1. In a bowl, mix the cooked rice and masa arepa. Bring the mixture together with your hands, adding water a little at a time until it comes together
  2. Mix in the egg, cheese, salt, and pepper. If mixture seems too dry add water a little a time
  3. Shape dough into round patties
  4. Heat a griddle or a skillet on medium heat. Add nonstick spray
  5. Cook arepas for 3-4 minutes or until browned. Flip over and cook them on the other side until golden
  6. Remove from heat, split and fill
  7. Enjoy!

Notes

  • Day-old cooked rice works best for binding the arepa dough effectively.
