Venison Steak Salad Wraps with Blue Cheese

Venison Steak Salad Wraps with Blue Cheese consist of grilled venison slices wrapped in tortillas with romaine, cherry tomatoes, red onion, blue cheese crumbles, and a creamy blue cheese dressing. The venison is seasoned simply and grilled to medium-rare, then rested and sliced thin. The homemade dressing combines blue cheese, mayonnaise, buttermilk, sour cream, and lemon juice for acidity. These wraps balance the rich game meat with fresh vegetables and tangy cheese, offering a hearty and flavorful meal.

Description

This recipe features venison side of round steak seasoned with salt and pepper, grilled to medium-rare at approximately 120°F internal temperature, then rested before slicing thinly. The slices are layered on tortillas with chopped romaine lettuce, quartered cherry tomatoes, thinly sliced red onion, and blue cheese crumbles. The wraps are finished with a homemade blue cheese dressing that blends blue cheese, mayonnaise, buttermilk, sour cream, lemon juice, sugar, garlic powder, and black pepper, whisked together and chilled to develop flavors.

The flavor profile combines the robust, lean venison steak with the creamy tanginess of blue cheese and dressing, balanced by the fresh crunch of lettuce and sharpness of onion and tomatoes. The tortillas hold the components together, delivering the wrap as a handheld meal suitable for lunch or dinner. The grilling method imparts subtle char and juiciness while the resting step ensures tender slices.

The recipe’s step to chill the dressing at least two hours enhances the texture and flavor integration, while the steak’s resting allows juices to redistribute. Wrapping fresh vegetables with flavorful meat and a rich dressing brings a layered combination of texture and taste.

Ingredients

Servings

Wraps:

  • 8 oz venison side of round
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tortillas 10 inch
  • 1 cup romaine lettuce chopped
  • ½ cup cherry tomato quartered
  • cup red onion thinly sliced
  • ¼ cup blue cheese crumbles
  • ¼ cup blue cheese dressing homemade or store-bought

Blue Cheese Dressing:

  • 3 oz blue cheese crumbles
  • cup mayonnaise
  • cup buttermilk
  • cup sour cream
  • 1 tablespoon lemon juice
  • ½ teaspoon sugar
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • salt pinch

Instructions

Blue Cheese Dressing:

  1. Add all ingredients except blue cheese to a small bowl. Whisk until well-combined.
  2. Add half of blue cheese crumbles and squish them into the dressing with a spoon. Fold the rest of the crumbles into the dressing.
  3. Refrigerate for at least 2 hours before using. Refrigerate for up to 1 week.

Wraps:

  1. Preheat grill to 500°F.
  2. Season steak with salt and pepper.
  3. Grill steak 5-7 minutes per side or until internal temperature reaches 120°F. Cooking time varies widely based on the shape and thickness of the meat but an internal temperature of 120°F will lead to medium-rare meat.
  4. Remove steak from grill and let rest for 10 minutes. Slice into approximately ⅛" slices.
  5. While meat is resting, prepare the rest of the wraps.
  6. Lay tortillas flat. Add ½ cup romaine to each tortilla. Drizzle 2 tablespoon dressing over romaine. Add ¼ cup tomatoes and a few slices of red onion. Top with 2 tablespoon blue cheese crumbles. Arrange sliced steak on top.
  7. Fold the left and right edges of the tortilla toward the center. Then use both hands to take the long end closest to you and fold it over the filling. Continue rolling it tightly until it looks like a burrito.
  8. Slice in half, if desired, and serve!
