Vermicelli Noodles Chow Mei Fun Recipe

Ingredients

  • 6 oz rice vermicelli noodles dry
  • 1 tablespoon vegetable oil
  • ¼ pound Chinese BBQ pork
  • ½ pound Shrimp peeled and deveined, large
  • 2 cups Napa cabbage shredded
  • 1 carrot cut into matchsticks
  • 1 yellow onion sliced thin, small
  • 2 egg beaten, large
  • 1 tablespoon curry powder
  • 1 tablespoon cooking wine
  • 1 tablespoon soy sauce
  • ½ teaspoon sesame oil
  • salt to taste
  • black pepper to taste
  • 2 green onions chopped

Instructions

  1. Add the noodles to a medium bowl and pour hot water on top to cover. Soak for 10 minutes until al dente. Drain the noodles. Cut into smaller pieces using kitchen scissors and set aside.
  2. Add oil to a wok over medium-high heat. Once hot, add pork and shrimp. Stir fry for 2-3 minutes until the shrimp turns pink. Then remove to a plate.
  3. Add the cabbage, carrot, and onions to the pan. Sauté for 3-4 minutes or until tender.
  4. Make space in the middle of the pan by pushing the vegetables to the edge. Then pour the beaten eggs and scramble them, scraping the bottom of the pan to prevent sticking.
  5. In a small bowl, mix together curry powder, cooking wine and soy sauce.
  6. Add the noodles, pork, and shrimp to the pan. Then add the curry mixture and toss until the other ingredients have absorbed the yellow color.
  7. Season with salt and pepper. Drizzle the sesame oil on top and add the green onions. Serve and enjoy!
