Vibrant Celery Salad with Dates & Pistachios
Description
The Vibrant Celery Salad with Dates & Pistachios features thinly sliced celery stalks and chopped celery leaves mixed with sweet chopped Medjool dates and peeled mandarin orange segments. The dressing combines extra virgin olive oil, lemon juice, sea salt, black pepper, and freshly chopped flat-leaf parsley to infuse freshness and subtle herbal notes.
The salad balances crisp and slightly bitter celery with the natural sweetness of dates and citrus brightness from mandarins. Optional roughly chopped pistachios contribute a nutty crunch, enhancing the overall texture and flavor variety. The combination creates a colorful and refreshing salad.
This salad pairs well with dishes like couscous with coconut yogurt, vegan moussaka, or kale falafel hummus wraps, complementing their richer flavors. It is best enjoyed fresh, as leftovers keep well refrigerated for 1 to 2 days, though not suitable for freezing.
Seasonings can be adjusted according to taste, and different citrus fruits such as tangerines or clementines can be used interchangeably.
Ingredients
- 2 Tbsp extra virgin olive oil
- 1 ½ Tbsp lemon juice
- 1/2 tsp salt sea salt
- 1/4 tsp black pepper ground
- 2 Tbsp flat-leaf parsley freshly chopped
- 3-4 pitted date 4 dates yield ~1/2 cup or 85g measured after pitting, Medjool variety, finely chopped
- 1 ½ cups celery stalk 4 large stalks yield ~1 ½ cups or 180 g, thinly sliced
- 3 Tbsp celery leaves chopped
- 1 cup mandarin orange 2 small mandarins yield ~1 cup chopped, fresh slices, peeled and pith removed, cut into 1-inch pieces
- 1/4 cup pistachios optional, shelled, roughly chopped
Instructions
- To a large mixing bowl, add olive oil, lemon juice, salt, pepper, and parsley, and whisk to combine.
- Add the chopped dates, breaking them apart with your fingers. You can also use a whisk or fork as needed to break them up completely.
- Add the celery, celery leaves, mandarin oranges, and pistachios (optional) and mix with two spoons until all the ingredients are evenly distributed. Taste and adjust as needed, adding more dates for sweetness, lemon juice for brightness, or salt to taste.
- This salad pairs beautifully with couscous and coconut yogurt, or alongside our Easy Vegan Moussaka or Kale Falafel Hummus Wraps (30 Minutes!).
- Best when fresh. Leftovers will keep stored in the refrigerator for 1-2 days. Not freezer friendly.
Notes
- Tangerines, satsumas, or clementines can be used in place of mandarins.
