Vietnamese Caramel Sauce (Nuoc Mau)

Vietnamese Caramel Sauce, or Nuoc Mau, is made by carefully caramelizing granulated sugar until it turns a dark amber color, then quickly adding water to dissolve the sugar, resulting in a versatile syrup used in various Vietnamese dishes. This sauce offers sweet, slightly nutty notes and a glossy finish.

Description

Vietnamese Caramel Sauce (Nuoc Mau) starts by evenly sprinkling granulated sugar into a saucepan over medium heat without stirring initially. As the sugar melts and changes color from clear to dark amber, constant stirring with a whisk or spatula prevents burning. Once the caramel reaches a deep amber hue and begins to smoke, water is immediately added off the heat to dissolve the caramel, producing a syrupy sauce.

The sauce is cooled and stored in the refrigerator for up to three months. Nuoc Mau is valued for its glossy appearance and rich sweet flavor, which enhances and colors many Vietnamese dishes such as braised meats and dipping sauces.

Ingredients

Servings
  • 4 tablespoons granulated sugar white
  • cup water

Instructions

  1. (Note: The caramelization process happens quickly. Read the direction first before starting. Do not leave the stove unattended and have the water pre-measured before starting). Turn the stovetop to medium heat, and sprinkle sugar evenly over the surface of a small saucepan. Let it sit for 1-2 minutes without stirring.
  2. Once the sugar starts to melt, use a whisk or rubber spatula to stir constantly for 4-5 minutes (times will vary depending on your stovetop). You will see the sugar turning from clear to champagne yellow to a dark amber color.
  3. As soon as it starts smoking, immediately turn off the heat, pour in the water, and stir until the sugar is dissolved.
  4. Once it has cooled down, store it in a jar with a lid in the fridge for up to 3 months.
