Vietnamese Dipping Fish Sauce Recipe (Nước Chấm/Nước Mắm Chấm)

This Vietnamese Dipping Fish Sauce blends fish sauce, lime juice, sugar, and water to create a balanced, tangy, and slightly sweet condiment. Optional minced garlic and bird's eye chili add pungency and heat. The sauce is stirred until the sugar dissolves and adjusted by taste to match the desired balance of sourness and saltiness. It is commonly served alongside unseasoned dishes to provide bright and savory contrast.

Description

The recipe for Vietnamese Dipping Fish Sauce, known as Nước Chấm or Nước Mắm Chấm, begins by dissolving sugar in water, sometimes aided by heating a portion of the water. Then freshly squeezed lime or lemon juice is gradually added until the flavor resembles lemonade, providing the desired level of tartness. Fish sauce is added incrementally to contribute a salty, umami depth, with the expectation that the sauce will be intense enough to flavor plain foods.

Optionally, minced garlic and finely chopped bird's eye chili (or Thai chili) are included to introduce sharp pungency and mild heat, rounded against the sweet-sour base. This dipping sauce is essential in Vietnamese cuisine and complements fresh spring rolls, grilled meats, or steamed vegetables.

Ingredients

Servings
  • 6 tbsp water
  • 2 tbsp sugar
  • 1.5 .5 tbsp lime juice freshly squeezed or lemon juice
  • 2 tbsp fish sauce

Optional Ingredients

  • 1/2 /2 clove garlic minced
  • 1/2 /2 bird's eye chile or Thai chile, minced

Instructions

  1. Combine 6 tbsp water and 2 tbsp sugar in a bowl. Optional: heat 1/3 of the water, then mix in to make dissolving the sugar easier, then add the rest of the water.
  2. Add 1.5 tbsp freshly squeezed lime or lemon juice in increments until you like how it tastes. A good guide is it should taste like lemonade/limeade.
  3. Add 2 tbsp fish sauce in small increments until you like how it tastes. It should be a little strong since it will be paired with unseasoned food.
  4. Top with 1/2 clove minced garlic and 1/2 minced bird's eye or Thai chile then serve.
