Vindaloo Spice Mix is a blend of toasted whole cumin, coriander, black peppercorns, cardamom, cloves, cinnamon, and dried Kashmiri red chilies ground into a fine powder. This vibrant red spice blend is used as a base for the spicy, tangy Vindaloo curry, providing warmth and aroma without excessive heat when using Kashmiri chilies.

Description

This Vindaloo Spice Mix features a combination of whole spices toasted briefly to release their aromas. The core spices include cumin seeds, coriander seeds, black peppercorns, green cardamom pods, cloves, a cinnamon stick, and dried Kashmiri red chilies. After toasting, the spices are cooled and then finely ground into a powder, suitable for use in Vindaloo curry or other Indian dishes needing a warm, complex spice profile.

The Kashmiri red chilies impart a striking red color and mild heat, distinguishing this blend from hotter chili powders. Toasting enhances the spices’ flavors, making the blend aromatic and balanced.

The mixture is stored in an airtight container to preserve its freshness and potency in a cool, dry place. This allows the blend to be prepared in advance and used as needed.

Ingredients

  • 2 teaspoons cumin seeds
  • 2 teaspoons coriander seeds
  • 20 black peppercorns
  • 4 green cardamom
  • 4 cloves
  • 1 inch cinnamon stick
  • 8 red chili de-stemmed and broken into half, whole; dried; Kashmiri

Instructions

  1. Add all the spices to a frying pan and lightly toast until aromatic, 2 to 3 minutes.
  2. Transfer the spices to a plate and let cool completely.
  3. Grind the spices in a spice grinder to make a fine powder. Makes 4 tablespoons of Vindaloo spice mix.
  4. Store in an airtight container in a cool, dry place.

Notes

  • To achieve the mild heat and vibrant red color, use Kashmiri chilies; substitute with hotter red chilies or add cayenne pepper for more spice.
