Description
This vegetarian sandwich replicates the iconic Philly cheesesteak by using king oyster mushrooms shredded into strips and cooked until their moisture evaporates, giving them a firm, meat-like texture. Green bell peppers and onions are softened in olive oil and mixed back with the mushrooms, then seasoned with soy sauce, vegan Worcestershire sauce, smoked paprika, garlic and onion powders, salt, and pepper.
Cheese slices are melted over the mushroom-vegetable mixture while covered in the pan before being transferred to soft sub or hoagie rolls. This method builds layers of flavor and a melty finish similar to the original cheesesteak without using actual beef.
The sandwich is ready to serve warm and works well as a meatless alternative for those seeking a familiar comfort food taste and texture. Leftovers keep well refrigerated in an airtight container for up to four days.
Ingredients
- 2 Tbsp olive oil divided, 30 mL
- 1 green bell pepper thinly sliced
- 1 white onion thinly sliced, medium
- 4 king oyster mushrooms
- 1 Tbsp soy sauce 15 mL
- 1 tsp Worcestershire sauce 5 mL, vegan
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 to 3 lices provolone cheese or American cheese
- 2 to 3 sub roll soft, includes hoagie rolls
Instructions
- Pepper and Onions: Heat 1 Tbsp of oil in a large saute pan over medium heat. Add pepper and onion, cooking until soft and fragrant, 5 to 7 minutes.
- Mushrooms. Meanwhile, shred mushrooms with forks into rough strips. Remove pepper and onions from pan. Heat remaining oil then add mushrooms, soy, Worcestershire, and seasonings. Cook over medium/high heat until mushrooms are soft and moisture has all cooked out, about 10 minutes.
- Cheese It: Add pepper and onions back into the pan, mixing into the mushrooms. Shape into 2 or 3 mounds then top each with cheese. Cover and cook until cheese melts, 1 to 2 minutes. Transfer to rolls or buns and serve warm.
Notes
- Use vegan cheese and omit jalapeño to make a fully vegan version of this sandwich.
- Store any leftovers in an airtight container in the refrigerator for up to four days.
- Shred king oyster mushrooms with forks to create strips that simulate sliced steak texture.
