Virginia Spoon Bread
Description
Virginia Spoon Bread begins by stirring cornmeal into boiling water before mixing in eggs one at a time, ensuring smooth incorporation. Baking powder dissolved in some milk is added with the rest of the milk to create a leavened batter. The mixture is poured into a buttered, preheated baking dish or cast iron skillet, which promotes a crusty exterior while the interior remains soft and moist.
Baked at 400°F for about 30 minutes, the spoon bread is done when a toothpick inserted in the center comes out clean. The result is a cornmeal bread that can be served warm, often enhanced with butter and a drizzle of honey, maple syrup, or apple butter for sweetness.
Using whole or at least 2% milk adds richness and moisture that keeps the spoon bread soft. The hot baking vessel is key to achieving crisp edges, differentiating it from skillet cornbread thanks to its soft, spoonable texture inside. Checking doneness carefully prevents drying out the bread.
Ingredients
- 1 cup water boiling
- 1 cup cornmeal
- 2 large egg
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1 cup milk divided, plus 3 tablespoons
- 1 tablespoon butter (for greasing the pan)
- butter optional, for serving
- honey optional, for serving
Instructions
- Place a medium baking dish (about 8 inches square) or an 8-inch cast iron skillet in a cold oven. Preheat the oven to 400°F. The pan will warm up while the oven heats.
- Meanwhile, stir cornmeal into boiling water. Add eggs one at a time, mixing well after each addition.
- Add salt. Dissolve baking powder in 3 tablespoons of milk. Add the baking powder mixture to the remaining 1 cup of milk. Add milk and baking powder mixture to the cornmeal.
- Butter the hot baking dish. Transfer mixture to the buttered dish. Bake at 400°F for 30 minutes, or until a toothpick inserted in the center comes out clean.
- Serve spoon bread warm from the oven.
Notes
- Bake in a preheated dish or cast iron skillet to achieve crisp edges and tender interior.
- Serve warm topped with butter and honey, maple syrup, or apple butter for added flavor.
- Use whole or 2% milk to add richness and moisture, aiding a moist spoon bread.
- Check doneness by inserting a toothpick in the center; it should come out clean without overbaking.
