Description

This recipe starts by cooking pasta to just shy of al dente, reserving some cooking water before draining. Bacon is rendered in a pan, then thinly sliced onions and garlic are sautéed until softened. Mushrooms are added and cooked until tender. The heat is reduced, and a sauce made from soy sauce and mirin is combined with the pasta.

The pasta, vegetables, and sauce are tossed together, and reserved cooking water is added as needed to loosen the mixture, coating the pasta evenly. This creates a glossy, subtly sweet and salty sauce with deep umami from soy and bacon. The finish includes garnishes like chopped green onions, thin-cut nori strips, and optionally bonito flakes for a smoky note.

Ingredients

Servings

Pasta:

  • 1 lb pasta your choice of spaghetti, angel hair, or linguine
  • ¼ white onion sliced thinly
  • 1 tablespoon garlic minced
  • 4 lices Bacon cut into pieces
  • 300 g mushrooms cut into pieces

Wafu sauce:

  • 3 tablespoon soy sauce
  • 1 tablespoon mirin
  • ¾ C - 1 C pasta cooking water reserved

Garnish:

  • 1 talk green onions chopped
  • nori seaweed cut into thin pieces
  • bonito flakes optional

Instructions

  1. Cook pasta according to the package directions, minus 1 minute (to ensure al dente texture).
  2. Reserve about 1 C of pasta cooking liquid and drain the pasta. Set aside.
  3. Heat a large pot or frying pan over medium heat and add in the bacon. Cook until the bacon renders.
  4. Add in onions and garlic, and saute, cooking until onions are slightly softened and aromatic.
  5. Add in the mushrooms and continue to cook, stirring every so often.
  6. Reduce the heat.
  7. In a small bowl, combine soy sauce and mirin.
  8. Add in the pasta, along with the soy sauce and mirin mixture.
  9. Use a pair of tongs to coat the pasta with the sauce.
  10. Pour in enough reserved pasta cooking liquid to loosen.
  11. Remove from heat and garnish with chopped green onions, nori and bonito flakes.
