The Waldorf salad is a salad composed of apple, celery, walnuts and grapes and mayonnaise sauce, created at the Waldorf Hotel in New York.

Ingredients
- 2 apple with skin, diced or thinly sliced, tart
- 1 tablespoon brown sugar
- 3 teaspoons lemon juice
- 2 celery cut into brunoise, stalks
- 12 oz. red grape , cut in 2
- 6 oz. walnuts or pecans, cut in half, toasted kernels
- ½ cup whipping cream
- 4 tablespoons mayonnaise
- 1 tablespoon apple cider vinegar
- ½ teaspoon salt fine
- lettuce optional, leaves
- black pepper , freshly ground
- parsley or chives, for decoration, chopped
Instructions
- Place the apple pieces in a salad bowl and sprinkle them with brown sugar and lemon juice. Stir well to coat so that the apples do not darken.
- Add the celery, grapes, walnuts and apple cider vinegar.
- In a large bowl, whip the whipping cream until peaks form, then gently stir in the mayonnaise.
- Add to the apple mixture and season with salt and pepper.
- Taste and adjust seasoning.
- Refrigerate for at least 1 hour before serving.
- Sprinkle with parsley or chives and serve the Waldorf salad as is by itself or on a bed of lettuce leaves.
