For the salad

  • 1 1/2 cups apple cut into 1/2 inch pieces, I use red and green
  • 3/4 cup celery thinly sliced
  • 1 cup grapes halved
  • 1/2 cup walnuts chopped
  • 1 tablespoon parsley chopped

For the dressing

  • 1/2 cup mayonnaise or plain yogurt
  • 1 tablespoon granulated sugar
  • 1 teaspoon lemon juice
  • 1/8 teaspoon salt

Instructions

  1. Place the apples, celery, grapes and walnuts in a large bowl.
  2. In a small bowl, mix together the mayonnaise, sugar, lemon juice and salt.
  3. Pour the dressing over the fruit and toss to coat. Sprinkle with parsley then serve, garnished with additional fruit if desired.
