Walnut Butter
Description
This Walnut Butter recipe starts with toasting walnuts in the oven or on the stovetop to enhance their nutty flavor and aroma. The toasted nuts are processed in a food processor until they transform from crumbles to a smooth, thick butter over several minutes. Adding maple syrup provides gentle sweetness, while cinnamon and salt offer warmth and balance.
The texture of the walnut butter is creamy and spreadable, with slight natural oiliness from the nuts. The flavor is mildly sweet with spice from cinnamon and an earthy nuttiness. This natural nut butter can replace peanut butter in many uses, from toast toppings to baking ingredients.
Storing it in the refrigerator helps preserve freshness for up to a month. The notes suggest patience during blending and checking the toast closely to avoid burning, as walnuts toast quickly due to high fat content.
Ingredients
- 2 ½ cups walnuts raw, 280g
- ½ tablespoon maple syrup
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt sea salt
Instructions
- Preheat the oven to 350°F / 175°C.
- Spread the walnuts onto a baking sheet in a single layer and bake for 7 minutes or until toasted - check them often as they can quickly burn.TIP: You can also toast the walnuts, in batches, in a dry frying pan over a medium heat, stirring often.
- Pour the toasted walnuts into a food processor or blender (no need to cool first) and whiz until smooth. You’ll need to scrape the sides down often. It will take about 7 minutes to go from nuts, to crumbles, to thick lovely walnut butter.
- Once it’s turned to walnut butter, add the maple syrup, cinnamon and salt and process just to combine.
- Store in an airtight container in the fridge for up to 1 month.
Notes
- Toast walnuts carefully, checking often to avoid burning due to their high fat content.
- Be patient when processing; scrape down the sides frequently to help achieve a smooth texture.
- Adjust thickness by adding small amounts of oil if desired.
- Use walnut butter as a spread, in baking, or mixed into oatmeal for added flavor and protein.
- Variations include substituting maple syrup with honey or agave, or adding spices like pumpkin spice or cocoa powder for flavor twists.
