Walnut Skordalia
Description
Walnut Skordalia combines shelled walnuts and softened bread with garlic, red wine vinegar, and extra virgin olive oil to create a smooth paste. The bread is first soaked and squeezed to remove excess water, ensuring the right consistency upon blending. The olive oil and vinegar contribute both richness and acidity, balancing the robust garlic and earthy walnuts.
The flavor is savory with a gentle sharpness from the garlic and vinegar, while the texture is creamy and spreadable. This blend can serve as a dip or condiment, pairing well with vegetables or breads.
To serve, drizzle a little olive oil over the top before presenting it immediately for fresh flavor and appealing sheen. Leftovers can be stored covered in the refrigerator for a few days without loss of quality.
