Description
The recipe begins by cutting cold bacon into small pieces for easier handling, then rendering it in a sauté pan. Sliced cremini mushrooms are added to the bacon fat and cooked until coated and tender. Honey mustard dressing is incorporated into the mixture and warmed slowly, creating a flavorful sauce. Fresh napa cabbage is chopped and drained in a bowl, topped with crumbled bleu cheese. The warm bacon-mushroom-dressing mixture is poured over the cabbage and cheese, then tossed well to soften the cabbage slightly and meld the flavors together. The salad is served immediately to retain its texture and temperature balance.
The dish offers a blend of smoky bacon, earthy mushrooms, tangy and creamy bleu cheese, and the mild crunch of napa cabbage dressed with a sweet and sharp honey mustard. It works well as a hearty side or lighter entrée.
Ingredients
- 1 lb Bacon
- 1 lb cremini mushroom sliced
- 1 Napa cabbage chop, large
- 8 oz honey mustard salad dressing (See Note 1)
- 6 oz bleu cheese crumbled
Instructions
- When the bacon is cold, cut into small pieces, it's easier to handle.
- In a large sauté pan render the bacon and when almost cooked add the mushrooms, tossing to coat with bacon fat and sauté for several minutes.
- Add the Honey Mustard salad dressing to the bacon mushroom mixture and cook for several minutes more on low.
- Wash and chop the cabbage, let drain and place in a large bowl. Pour the bleu cheese crumbles over the cabbage.
- Next pour the hot mustard, bacon and mushroom mixture over the cabbage and bleu cheese and toss well to incorporate. The cabbage wilts nicely and the flavors are amazing. Serve immediately.
Notes
- Choose a honey mustard salad dressing you prefer; Ken's Steak House brand is one option but any similar style dressing works.
