Warm Mexican Corn Salad (Elote)
Description
The Warm Mexican Corn Salad recipe uses fresh corn cut from boiled cobs and combines it with a dressing of mayonnaise, fat-free Greek yogurt, chili powder, and fresh lime juice. This creates a creamy, tangy base that complements the sweet corn. The addition of minced cilantro and scallions introduces fresh herbal and mild onion flavors while cotija cheese adds a salty, crumbly texture and a sharp flavor contrast.
This salad’s texture is a balance of tender corn kernels with creamy and slightly spicy coating. Chili powder adds a subtle heat adjustable to taste while the lime juice contributes brightness. It can be served warm or at room temperature, making it versatile for meals or as a side dish for Mexican-themed menus.
Serving the salad alongside lime wedges allows diners to add more acidity if desired. This dish highlights fresh ingredients and is suitable as a refreshing accompaniment that emphasizes Mexican flavors known from street food traditions like elote.
