Wassail
Description
The Wassail recipe combines apple cider and citrus juices with whole spices and clove-studded apples, gently simmered to meld the flavors. The simmering process helps release the aromas and flavors from the cloves and cinnamon sticks into the cider, while the lemon and orange juices add brightness and acidity. The optional brown sugar adds a mild sweetening balance. Simmering for 30 to 45 minutes allows the spices to deeply infuse without overpowering the fruitiness of the cider.
This classic warm beverage can be ladled into mugs for a cozy drink at festive occasions or winter nights. Removing the apples and whole spices before serving ensures a smooth, spiced cider.
The recipe is flexible for making ahead and storing in the refrigerator, and it reheats well on the stovetop, microwave, or slow cooker. For convenience, you can prepare the Wassail in a slow cooker by simmering on low or high for a few hours.
