Wassail is a warm spiced apple cider beverage made by simmering small apples studded with whole cloves in a mix of apple cider, orange juice, and warming spices like star anise, cinnamon, ginger, and nutmeg. Honey sweetens the cider before serving hot, optionally with a shot of brandy or Grand Marnier for added warmth and flavor.

Description

The Wassail recipe involves pressing whole cloves into small apples and gently heating them in a Dutch oven with apple cider, orange juice, whole star anise, cinnamon sticks, ground ginger, and nutmeg. This mixture is warmed slowly over low heat for 45 minutes to an hour, allowing the flavors to infuse fully without boiling. Honey is stirred in to bring mild sweetness and balance the spices.

The resulting beverage is fragrant with notes of clove, star anise, and cinnamon, alongside the natural fruity sweetness of apples and orange. Before serving, it is ladled into mugs and can be garnished with a slice of fresh orange and optionally enhanced with a shot of brandy or Grand Marnier to provide a cozy warmth.

  • 2 apple small
  • 1 tablespoon clove whole
  • 8 cups apple cider
  • 1 cup orange juice
  • 3 whole star anise
  • 2 ticks cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons honey
  • brandy or grand marnier

Instructions

  1. Press the whole cloves into the whole apples. Add them to a large Dutch oven or pot and place it over low heat.
  2. Add the apple cider, orange juice, star anise cinnamon sticks, giner, nutmeg and honey, stirring to combine. Allow the mixture to marry for 45 minutes to 1 hour, stirring occasionally and never bring above a low simmer (ideally not even a simmer!).
  3. When ready to serve, ladle into large mugs and top with a slice of fresh orange and if desired, a shot of your desired alcohol.
