Description
The Watercress Salad uses fresh watercress leaves paired with sliced avocado, orange segments, and red pepper for a mix of peppery, creamy, sweet, and crisp elements. The dressing mixes extra virgin olive oil, apple cider vinegar, grated garlic, Dijon mustard, sea salt, and black pepper, which brightens and ties together the flavors.
The salad is tossed just before serving to maintain ingredient freshness and prevent sogginess. Adding seeds such as pine nuts enhances the salad with crunch and a nutty taste. A splash of champagne vinegar can be added to the vinaigrette for extra zest. For a spicy variation, pinch in some red chili flakes before serving.
Ingredients
- 85 g watercress
- 3 tablespoon olive oil extra virgin
- 1 tablespoon apple cider vinegar
- 1 garlic grated, clove
- 3 pinch salt sea salt
- 3 pinch black pepper ground
- 1 tablespoon Dijon mustard
- 1 avocado sliced
- 1 orange sliced
- 1 red pepper sliced
- seeds to serve (optional)
Instructions
- In a small bowl mix together 3 tablespoon Olive oil, 1 tablespoon Apple cider vinegar, 3 pinch Sea salt, 1 Garlic clove and 1 tablespoon Dijon mustard.
- Put 85 g Watercress, 1 Avocado, 1 Orange and 1 Red pepper in a large mixing bowl.
- Drizzle over the dressing and mix well to coat everything.
- Transfer to a serving bowl and sprinkle with Seeds (optional).
Notes
- Add a splash of champagne vinegar to the vinaigrette for more complexity.
- Pine nuts work well as a crunchy, creamy topping for added texture.
- Include red chili flakes if a bit of heat is desired.
- Toss the salad with dressing just before serving to keep the leaves crisp.
