Watermelon and Couscous Salad

Watermelon and couscous salad with feta and mint is a refreshing Middle Eastern style grain salad for summer!

Ingredients

Servings

dressing

  • 1/4 cup olive oil extra virgin, robust variety
  • 1 Tbsp pomegranate molasses add more to taste
  • 1 Tbsp lime juice fresh

salad

  • 2 cups maftoul couscous cooked, measure after cooking
  • 4 cups watermelon cubed, seedless
  • 1 Tbsp lime juice fresh
  • 1/2 cup pistachio chopped
  • 1/4 red onion small, thinly slivered
  • parsley handful, fresh, chopped
  • mint fresh leaves, thinly sliced
  • 1/2 tsp sumac
  • 2-3 ounces feta cheese Greek, rough crumbled, about 1/2 cup or more
  • salt fresh cracked, to taste
  • black pepper fresh cracked, to taste

Instructions

  1. Whisk together the dressing ingredients.
  2. Put the maftoul in a large bowl, it's ok if it's still a little warm. Toss with 2-3 tablespoons of the dressing.
  3. Toss the watermelon with the lime juice and add to the bowl, along with the onion, chopped pistachios, herbs, and sumac. Toss the salad with more of the dressing.
  4. Top with roughly crumbled feta and a good grinding of black pepper. I like to garnish with some parsley and/or mint leaves.
