Watermelon and Feta Salad

Watermelon and feta salad is sweet, juicy, salty, and tangy! This flavorful salad is always in my top 10 side dishes every summer!

Ingredients

Servings

Dressing:

  • 1 Tbsp white vinegar $0.02
  • 2 Tbsp olive oil $0.34
  • 1/2 tsp salt $0.01
  • 1/2 tsp black pepper $0.08, freshly cracked
  • 2 Tbsp balsamic glaze $0.58, homemade

Salad:

  • 1/2 small watermelon $1.98, diced, about 4 cups
  • 1/2 cup feta cheese $2.88, crumbled
  • 1 cucumber $0.64, peeled and diced
  • 1/2 red onion $0.46, finely julienned
  • 2 Tbsp mint $0.89, minced, fresh
  • 2 Tbsp parsley $0.16, fresh, minced

Instructions

  1. To make the dressing, combine white vinegar, olive oil, salt and pepper in a bowl. Whisk to emulsify.
  2. Dice watermelon into 1/2-inch cubes.
  3. Gather diced watermelon, crumbled feta cheese, diced cucumber, julienned onion, minced parsley and mint.
  4. Pour dressing over watermelon salad components.
  5. Gently toss the salad in a large mixing bowl until combined. Be careful to not mash up all of the watermelon cubes! I like to let my watermelon feta salad sit in the refrigerator, covered, for a bit (even up to an hour or so!) to let the flavors really meld.
  6. Drizzle each portion with a generous swirl of Homemade Balsamic Glaze. Top with extra salt and pepper if needed and enjoy!
