Watermelon Blueberry Salad
Description
Watermelon Blueberry Salad features a blend of fruit and fresh vegetables including watermelon, cucumber, and blueberries, accented by chopped basil and crumbled feta cheese. The dressing combines extra virgin olive oil, fresh lime juice, honey for subtle sweetness, salt, and black pepper, delivering a tart and lightly sweet flavor profile. The salad is gently tossed to mix the dressing with the ingredients, allowing the flavors to meld without wilting the fresh produce.
The texture balances watery juiciness from watermelon and cucumber with the slight creaminess and saltiness of feta cheese, while the basil leaves add a fresh herbal note. This salad serves well as a summery side dish or a refreshing snack, pairing particularly well with grilled or roasted meats.
To adapt for dairy-free diets, omit feta and substitute with diced avocado. Leftovers can be stored in airtight containers refrigerated for up to two days, although fresh is best to maintain the crisp textures.
Ingredients
Watermelon Salad:
- 5 - 6 cups watermelon 1-inch cubes, cubed
- 1 ½ cups English cucumber peeled and cut into quarter moons
- 1 cup blueberries fresh
- ¼ cup basil chopped, fresh leaves
- ⅓ - ½ cup feta cheese crumbed
Lime Dressing:
- 1 -2 tablespoon extra-virgin olive oil
- 3 tablespoon lime juice about 1 - 2 limes, fresh
- 1 tablespoon honey for optional sweetness
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Add watermelon, cucumber, blueberries, basil, and feta to a large salad bowl.
- In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper.
- Pour dressing on top of the watermelon salad and gently toss to combine. I recommend tasting it and then adjusting the seasoning to your preference.
- Sprinkle with extra feta crumbles for serving, and enjoy!
Notes
- Remove feta cheese and use diced avocado to make a dairy-free version.
- Store leftovers in airtight containers refrigerated for up to two days.
- Feta can be substituted with crumbled goat cheese if preferred.
