I love the fresh flavors in this watermelon feta salad recipe and how easily it comes together. Made with mint, and a homemade orange dressing.

Ingredients
For the Dressing
- ¼ cup orange juice freshly squeezed
- ¼ cup lemon juice about 2 lemons, freshly squeezed
- ¼ cup shallot 1 large, minced
- 1 tablespoon honey
- 1 teaspoon kosher salt
- ½ cup extra virgin olive oil
- 6 cups arugula washed and spun dry, baby
For the Salad
- 3 cups watermelon cut in 1-inch cubes, seedless
- 8 ounces feta cheese crumbled
- 1 cup mint leaves finely chopped, whole, fresh
Instructions
Make the Dressing
- Whisk together the orange juice, lemon juice, shallots, honey, and salt. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, transfer the dressing to an airtight container or lidded jar and refrigerate.
Assemble the Salad
- Place the arugula, watermelon, feta, and mint in a large bowl.
- Drizzle with enough vinaigrette to coat the greens lightly and toss well.
- Taste for seasonings and serve immediately.
