  • ½ cup cucumber , chopped
  • 4 cups arugula

For the vinaigrette:

  • ¼ cup olive oil
  • 1 tablespoon lime juice fresh
  • 1 tablespoon white vinegar
  • 2 tablespoons honey
  • ½ teaspoon garlic , minced
  • ¼ teaspoon kosher salt coarse
  • ¼ teaspoon black pepper ground
  • 1 tablespoon mint chopped, fresh

Instructions

  1. In a large serving bowl, platter, or other preferred vessel, layer or arrange the watermelon, blueberries, feta, cucumber, and arugula as desired.
  2. Place the dressing ingredients into a jar or other container with a lid and shake vigorously to combine.
