Watermelon Feta Salad with Cucumber and Mint

This super refreshing watermelon feta salad with mint and cucumber is easy to make and just perfect for warm days!

Ingredients

Servings

For the vinaigrette

  • 1/4 cup extra virgin olive oil
  • 1/4 cup lime juice fresh
  • 1 tablespoon honey
  • salt to taste

For the salad

  • 5 cups watermelon cubed, seedless
  • 1 medium cucumber sliced, about 2 cups worth
  • 1/2 cup red onion thinly sliced
  • 6 ounces feta cheese crumbled
  • 10 large mint torn, leaves

Instructions

  1. In alarge bowl, whisk the dressing until combined. Season with salt to taste.
  2. Place the cubed watermelon, cucumber, and onion into the bowl and gently mix to combine.
  3. Place the salad onto a platter and top with the feta and mint. Enjoy!

Notes

  • A variety of cucumbers can be used.  Salad slicer, English cucumber, and Persian cucumbers all work well.  
  • The salad can be saved in the fridge for up to 3 days.  It will release a lot of water, so just drain it the before serving.
