This watermelon greek salad is refreshing, crisp and cooling. It's filled with cucumbers, kalamata olives, red onion and fresh herbs, then drizzled with a honey lemon dressing. It's delicious!

Ingredients
- 3 cups watermelon chunks
- 3 baby cucumbers, sliced
- ¾ cup pitted kalamata olives, sliced
- ½ red onion, thinly sliced
- ⅓ cup crumbled Feta cheese
- ¼ cup fresh mint leaves
- ¼ cup chopped fresh parsley
- 1 tablespoons chopped fresh dill
honey lemon vinaigrette
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh lemon juice
- 2 teaspoons honey
- 2 garlic cloves, minced
- ¼ teaspoon dried dill
- kosher salt and pepper
- ½ cup olive oil
Instructions
- In a large bowl of plate, combine the watermelon, cucumber, olives, onion and feta. Top with the fresh mint, parsley and dill. Sprinkle everything with salt and pepper.
- Drizzle the dressing on top and serve!
honey lemon vinaigrette
- Whisk together the vinegar, lemon juice, honey, garlic, dill and a big pinch of salt and pepper. Whisk in the olive oil until emulsified.
