The Watermelon lemonade recipe starts by blending peeled and diced watermelon, then straining it to remove seeds and pulp, resulting in a smooth juice.   • 3 cups watermelon (peeled, diced volume/ weight)
  • cup lemon juice freshly squeezed
  • 1 cup water
  • ¼ cup simple syrup (or more/less to taste), see notes
  • mint for serving
  • ice for serving

Instructions

  1. Put the watermelon cubes in a blender and blend until smooth. Strain through a fine strainer to remove seeds and coarse pulp - you should get around 2 cups (480ml) of watermelon juice.
  2. Combine the strained watermelon juice, lemon juice, water and simple syrup and stir to mix. Adjust a little to taste as you feel needed, eg a little more simple syrup or water. Chill if not using immediately. 
  3. Gently stir before serving over ice, garnished with mint. 

Notes

  • Simple syrup is made by heating equal parts sugar and water until sugar dissolves, then cooling and storing in the fridge for up to two weeks.
  • For Mint Watermelon lemonade, infuse the syrup with fresh mint leaves by steeping them as the syrup cools, then strain before use.
