Watermelon Peach Tomato Salad:
- 1 1/2 pounds watermelon cut into 1-2 inch (2.5-5 centimeter) pieces, fresh (680 grams
- 2 peach cut into thin wedges, fresh
- 2 tomato cut into thin wedges, medium
- 8 ounces mozzarella torn into 1 inch (2.5 centimeter) pieces, fresh, 227 grams
- 2 tablespoons mint leaf fresh
- 2 tablespoons basil fresh leaves
Instructions
To make the balsamic dressing:
- In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, honey, salt, and pepper until well combined. Set aside.
To assemble the salad:
- In a large bowl, gently toss together the watermelon, peach, tomato, and mozzarella until evenly distributed.
- Sprinkle the fresh mint and basil leaves over the top.
