Watermelon Salsa
Description
This salsa combines diced seedless watermelon with cool cucumber, pungent red onion, and spicy jalapeño to achieve complex flavors. Fresh cilantro and lime zest boost the brightness, while tajin seasoning adds a subtle chili-lime saltiness. The addition of diced avocado lends a creamy softness to contrast the crisp, juicy watermelon and crunchy vegetables.
The salsa is gently tossed to maintain distinct textures and served best right away to preserve freshness. It pairs naturally with tortilla chips for a summer appetizer or can complement grilled meats and seafood for a light topping.
For best results, prepare just before serving as the watermelon may release juice over time and avocado can brown, affecting texture and appearance.
Ingredients
- 4 cups watermelon diced, seedless
- ½ English cucumber diced
- ½ red onion diced
- 1 jalapeño seeded and diced
- 1 avocado diced
- ½ cup cilantro chopped, leaves
- 1 lime zested and juiced
- 2 teaspoons tajin seasoning
Instructions
- Place the watermelon, cucumbers, red onion, jalapeno pepper, avocado and cilantro in a large bowl.
- Add the lime zest and juice on top of the ingredients and sprinkle with the tajin seasoning. Toss gently to combine.
- Season to taste with salt and pepper and serve with tortilla chips.
Notes
- Prepare the watermelon salsa immediately before serving to keep the fruit firm and the avocado from browning.
