Watermelon Vodka Mint Salad

Ingredients

Servings
  • 7-8 cups watermelon cut into cubes about 1/2 large watermelon
  • 1/2 - 2/3 cup fresh squeezed orange juice
  • 1/2 cup vodka
  • 1/4 cup chopped fresh mint
  • pinch kosher salt or more to taste

Instructions

  1. Cut watermelon in half then cube and put into a bowl.
  2. In a separate bowl, juice orange and add vodka. Pour vodka and juice mixture over watermelon, mix, sprinkle pinch of salt, mix, and add chopped mint and do one final mix.
  3. Add more mint / salt to taste.
  4. Cover and refrigerate for at least an hour then serve!

Notes

  • Substitute fresh orange juice for jarred or whatever OJ you have. 
  • Pineapple mint and peppermint are my favorite kinds of fresh mint to use. 
  • Adjust the vodka to OJ ratios to your taste!  You will have leftover liquid in the bowl, but the last cuts of watermelon will soak up all of that flavor!
