West African Spicy Peanut Shrimp

Make this quick and easy recipe as a dinner for 2 or a bite-sized appetizer for a party! Spicy, and full of flavor inspired by West African Peanut Stew, these shrimp will disappear quickly!

Ingredients
- 1/3 /3 cup peanut butter
- 1 teaspoon cumin ground
- 1/4 /4 teaspoon Coriander
- 1 teaspoon cayenne pepper
- 1/2 /2 teaspoon onion powder
- 1 teaspoon kosher salt more to taste
- 1/2 /2 teaspoon black pepper freshly ground
- red pepper flakes dash
- 1/8 /8 teaspoon cinnamon
- 4 garlic minced, cloves
- 1 Tablespoon ginger 1-inch piece, freshly grated
- 1 lime juiced
- 1/3 /3 cup vegetable oil or oil of choice
- 3/4 - 1 /4 - 1 pound Shrimp peeled and deveined, raw
- cilantro for garnish
- green onions white and light green parts sliced, for garnish
- lime for garnish, wedges, additional
Instructions
- Whisk together peanut butter, spices, garlic, ginger, and lime juice. Slowly whisk in oil until combined. Stir in shrimp to coat, and let marinate in the fridge for about 30 minutes.
- Heat a skillet or grill pan over medium-high heat and grease with a light layer of oil. Place shrimp in the heated pan, side down, and cook for about 2 minutes on each side, until pink and translucent. Be sure to not crowd the pan, I usually do two batches.
- Serve alongside rice or by itself. Garnish with cilantro, green onion slices, or lime juice as desired.
Notes
- I use creamy peanut butter for a smoother texture, but chunky would work if it's what you have!
- If you want more of the sauce to dip in once the shrimp are cooked, either double or make 1 1/2 the amount of the marinade!
