Whipped Cottage Cheese Bowls

Whipped Cottage Cheese Bowls offer a smooth, creamy base made by blending cottage cheese with vanilla and sweetener, topped with fresh berries and slivered almonds for crunch. The blending transforms cottage cheese into a light, mousse-like texture balancing protein and sweetness. This bowl works well as a breakfast or snack featuring fresh fruit and nuts for texture contrast and added nutrition.

Description

This recipe combines cottage cheese with vanilla bean paste (or extract) and Monk Fruit Sweetener (or sugar, honey, syrup) blended until smooth. The whipped texture removes curds’ graininess and creates a creamy, mildly sweet base. Fresh strawberries and blueberries provide juicy, tart fruitiness, contrasting with the richness of the creamy cheese. Slivered almonds add a nutty crunch, enriching the mouthfeel.

The preparation is simple and requires only a blender and fresh ingredients, allowing flexibility with fruit and nut choices. The whipped cottage cheese is light enough to serve as a breakfast, dessert, or snack, especially when paired with seasonal fruit.

Substitutions include Greek yogurt for cottage cheese. Using vanilla yogurt can eliminate the need for additional sweetener or vanilla extract. Different fruits like mango, pineapple, or pomegranate seeds and nuts or seeds can be used to vary flavor, texture, and nutritional content.

  • Replace almonds with walnuts or pecans for a different nutty taste.
  • Add flax, chia, or hemp seeds on top to increase protein and fiber content.
